For most of human history — roughly eight thousand years of it — all beer was ale. Not ale in the modern sense of something particularly bitter or characterful, but ale in the technical sense: beer fermented warm, with yeast that works at or above room temperature, rising to the surface of the wort as it consumes the sugars and produces alcohol. The result was beer that was typically dark, opaque, often sour or spiced, and consumed young because it didn't keep well.
The Sumerians of ancient Mesopotamia, the Egyptians who built the pyramids, the medieval monks who brewed through Lent — they all drank versions of this. Beer that looked nothing like what's in your pint glass today. Dark, murky, flavoured with whatever herbs or spices were locally available, served at roughly the temperature of the room it was brewed in.
This was simply how beer was. Not because nobody had thought of something better, but because something crucial was not yet understood: the role of temperature in fermentation, and the existence of a completely different class of yeast that only operates in the cold.
The discovery that cold changed fermentation entirely — that yeasts could be encouraged to work slowly at near-freezing temperatures and produce something categorically different — was not a single dramatic eureka moment. It was a slow accumulation of accident, observation, and deliberate experimentation spread across Bavaria and Bohemia across several hundred years.
On April 23, 1516, in the Bavarian city of Ingolstadt, Duke Wilhelm IV issued a decree that would shape European brewing for the next five centuries. The section that concerns us is almost an afterthought in a longer document about grain prices and tavern regulations — 27 words in the original German that simply state that beer should be made from nothing but barley, hops, and water. Yeast wasn't mentioned because nobody yet understood what yeast was.
This is the Reinheitsgebot — the German Beer Purity Law — and the popular modern telling of it is mostly wrong. It was not primarily a quality initiative or an early food safety regulation. It was, at its core, economic policy: by restricting beer to barley, wheat and rye were freed up for bread, keeping food prices stable at a time when grain shortages could cause genuine social unrest. It was also somewhat protectionist — beers from Northern Germany often used additives that weren't grown in Bavaria, and the law made those beers non-compliant.

The name "Reinheitsgebot" — the "purity order" — was only coined in 1918 during a debate in the Bavarian parliament. For four centuries, everyone just called it the Surrogatverbot, the "adjunct prohibition." The rebranding into a heritage quality claim came later, and it worked spectacularly: today the Reinheitsgebot is one of the most effective pieces of marketing in the history of food and drink.
What the law did, however — regardless of its original intentions — was concentrate Bavarian brewing around a small number of ingredients and push brewers toward mastery rather than novelty. Without access to adjuncts and additions, Bavarian brewers had only the quality of their water, barley, hops, and process to differentiate themselves. Over centuries, this forced a very deep expertise. When the cold-temperature fermentation techniques were eventually discovered and refined, Bavaria had the technical infrastructure to exploit them fully.
The law remains in force in Germany — though in modified form. German brewers who want to label their product "beer" must still use only malted grain, hops, water, and yeast. In 1987 the European Court ruled it inadmissible as a trade barrier against imported beers, so foreign beers may be sold in Germany even if they don't comply. But German brewers still follow it domestically — and Bavarian brewers follow the stricter Bavarian version even for export. The craft beer movement has occasionally chafed against it, but most traditional German brewers regard it as core to their identity.
Bavaria is a cold place. The winters are long, the Alps are nearby, and for centuries Bavarian brewers had noticed something: beer brewed in winter lasted longer and tasted different from beer brewed in summer. It was clearer. Less sour. The flavours were cleaner. What they were observing, without yet understanding it, was the selective advantage of cold temperatures — summer brewing allowed contaminating bacteria to thrive alongside the yeast, while winter temperatures suppressed most of the spoilage organisms, giving the cold-adapted lager yeast a competitive advantage.
The Bavarian response was practical and incremental. By the 15th century, Munich had passed ordinances restricting summer brewing — no brewing between April 23 (St. George's Day) and September 29 (Michaelmas). Brewers dug cellars into hillsides, packed them with winter ice cut from mountain rivers, and stored their winter-brewed beer through the summer months. The combination of cold storage and residual yeast activity in the sealed barrels was producing something different: a clearer, more stable beer that they called Lagerbier — from the German lagern, to store.
But this was still, by modern standards, a dark and fairly rough product. The missing ingredient was technical knowledge about pale malt — the ability to kiln barley to a very light colour without scorching it, preserving the enzymes needed for efficient fermentation. This technique had been perfected in England, where coal-fired indirect kilning produced pale malt of remarkable consistency. It would take a pair of traveling Bavarian brewers to bring it back to the continent.
In 1833, two young Bavarian brewers — Gabriel Sedlmayr II of the Spaten Brewery in Munich and Anton Dreher of Vienna — embarked on a tour of English and Irish breweries that would change the history of beer. They visited the great English pale ale breweries, studied the techniques, and took extensive notes. They also, allegedly, smuggled samples of English malts and yeast back to the continent using hollow walking sticks. Whether the walking stick story is apocryphal is debated; what is certain is that both men returned with a thorough understanding of English indirect kilning and pale malt production.
Both applied what they'd learned at home. Dreher produced what became known as Vienna lager — a clean, amber-coloured bottom-fermented beer of unprecedented clarity and consistency. Sedlmayr pushed toward even paler malts at Spaten. By the early 1840s, both were producing lagers that were lighter, cleaner, and more stable than anything available before. The technical preconditions for the defining moment of modern brewing history were now in place. All that was needed was the right combination of ingredients — and an accidental genius to put them together.

Every commercial lager on earth — Heineken, Carlsberg, Corona, Sapporo, Kingfisher, Tsingtao — is a direct stylistic descendant of what Groll brewed in Pilsen in 1842.
The citizens of Plzeň had a problem. Their local beer was, by general consensus, terrible. In 1838, they made this opinion unusually clear: a group of burghers publicly hauled 36 casks of unacceptable local ale to the steps of City Hall and dumped them into the street in protest. The resulting stench drifting toward the river made the point effectively. Something had to change.
The city's response was ambitious. In 1839, the brewing-rights holders of Plzeň pooled resources and commissioned a brand-new, state-of-the-art brewery — built specifically to produce Bavarian-style bottom-fermented lager, which had a growing reputation for quality and consistency. The location was chosen carefully: on the banks of the Radbuza River, near a well, directly above sandstone foundations that could easily be carved into tunnels for cold storage. Then they hired a Bavarian.
His name was Josef Groll. He was 29 years old. His father owned a brewery in Vilshofen in Lower Bavaria and had described his son as the coarsest man in the whole of Bavaria — high praise in a region not known for social delicacy. Groll was difficult, argumentative, and apparently unpleasant to work with. He was also, according to the evidence of what he produced, a brewmaster of extraordinary instinct.

What Groll did in Pilsen was not a single innovation but a perfect convergence of four elements that had never been combined before:
On October 5, 1842, Groll prepared his first mash. On November 11, 1842 — the feast of St. Martin, when the markets of Plzeň were at their most crowded — the new beer was served publicly for the first time. The reaction was immediate and total. Nobody had ever seen a beer like this. Golden. Utterly clear. Sparkling. Fragrant with hops. Clean on the palate in a way that dark ales simply weren't. At a time when beer was universally dark and murky, Josef Groll's creation looked like a glass of captured sunlight.
Demand was instantaneous. The brewery expanded. Word spread through the Austro-Hungarian Empire. When the railway reached Pilsen in 1859, the beer could be exported rapidly before it spoiled. Within a decade, "Pilsner" — the beer style named for its city of origin — was being copied by breweries across Europe. Every imitation recognised the name of the original: the Pilsen brewery registered the trademark "Pilsner Urquell" — Plzeňský Prazdroj — meaning "original source of Pilsner," in 1898.
The problem with lager was always cold. You needed it to brew, you needed it to store, and before mechanical refrigeration you were entirely dependent on ice cut from frozen rivers and lakes in winter, hauled to cellars, and rationed through summer months. This was workable in Bavaria, where the Alps provided reliable winter ice and the beer-drinking season was largely cool. In tropical climates, or in cities far from mountain rivers, it was simply impossible.
In 1873, a German engineer named Carl von Linde changed this permanently. His mechanical refrigeration compressor — initially developed for a Munich brewery — made artificial cold available anywhere, year-round, at industrial scale. The effect on lager brewing was immediate and total. Within a generation, lager breweries had been established on every inhabited continent. The pale golden style from Pilsen was being imitated from Milwaukee to Shanghai, from São Paulo to Sydney.
The coincidence of refrigeration with another 19th century invention — inexpensive clear glass — made the aesthetic case for lager irresistible. Dark ales had been perfectly at home in pewter mugs or ceramic steins. But pale, golden, sparkling lager, served in clear glass, was visually extraordinary in a way that nothing else was. The glass became a selling tool. You wanted to see this beer. You wanted to show it off. It was something new, something modern, something industrial-age. In a century defined by progress, pale lager looked like progress tasted.
By 1876, Adolphus Busch in St. Louis had launched Budweiser — an American lager explicitly inspired by Bohemian models, made with local adjunct corn to keep the price accessible, refrigerated for stability, and distributed nationally by rail. It became the world's most commercially successful beer. In Germany, Heineken in the Netherlands, Carlsberg in Denmark, and breweries across Europe all converged on the same golden, clear, crisp style. The ale traditions of Britain and Belgium — stubbornly preserved because they were embedded in local drinking culture — became the exceptions rather than the rule.
By the late 20th century, more than 90% of all beer consumed globally was a lager of some kind. Corona (Mexico), Sapporo (Japan), Kingfisher (India), Tsingtao (China), Tusker (Kenya), Baltica (Russia) — every one of these is a stylistic descendant of what Josef Groll brewed in Pilsen in 1842. The world's best-selling beers — by volume — are all pale lagers. No single food or drink innovation in human history reached more people faster.
Understanding lager's history doesn't just make the story more interesting — it changes what you notice when you travel for beer.
When you drink a Pilsner Urquell in a cellar bar in Prague, you're drinking the closest living approximation of what Josef Groll made in 1842. The brewery uses the same soft Pilsen water, the same Saaz hops from Žatec, the same Moravian barley, and a yeast strain that has been maintained in continuous use since the 19th century. The triple-decoction mashing process — labour-intensive, time-consuming, and rare — produces a depth of malt character that simpler modern processes don't replicate. The tank-conditioned version, served unfiltered and unpasteurised directly from conditioning tanks, is the closest modern drinking experience to what caused a sensation in November 1842. It is genuinely different from the bottle you can buy at home.
When you sit in the beer garden at Kloster Andechs above the Ammersee and drink the Doppelbock Dunkel, you're drinking a style — strong, dark, malt-forward lager — that predates even the Reinheitsgebot, brewed by monks who have maintained the tradition for over 500 years. When you drink a Rauchbier at Schlenkerla in Bamberg, you're experiencing what all beer tasted like before indirect kilning made pale malt possible — the smoke character of the malt is not a novelty flavouring, it's archaeology.
The history of lager is the history of beer becoming the world's drink. And the best places to taste it are the places where it all began — before it was industrialised, before it was globalised, before it was made cheap and consistent and available everywhere.
